Prieto y Prieta Whisky is the result of an exciting collaboration between two friends. Begun in 2018, the brand is the brainchild of Txomin Alcorta and Carlos Moreno, two people with rich histories in the beverage world. Txomin, working in cooperage, originally hails from Basque country and Carlos, the founder of Mezcal Koch has been working with agave in Oaxaca for 15 years. The goal was to make a spirit highlighting the diversity of Oaxaca’s terroir outside of agave. Marrying Txomin’s knowledge of barrels and spirit maturation with Carlo’s experience in the Oaxacan landscape of spirit distillation proved to be the perfect match. Initial batches of the spirit were made for local restaurants like Criollio and Levadura de Olla in Centro before expanding production and settling on their flagship whisky made of 4 Oaxacan corn varietals aged in 3 distinct barrels.

Prieto y Prieta Moonshine is designed to be an ongoing concept reflective of Oaxaca’s diverse terroir expressed through maize. Like batches of field-blended agave spirits, this moonshine is produced from different crops of corn as time goes on, with the blend changing depending on season and harvest. This first batch is composed of a mash of 50% purple corn, 30% yellow corn, and 20% white corn, all processed together from cooking through distillation. The mash is distilled in copper pots with a refrescadera one time before resting in stainless steel for two months prior to bottling. Aromas of green mango skins, honeycomb, and freshly cut grass lead to a medium-rich palate full of ripe orchard fruit with a minerally dry finish.

Prieto y Prieta Whisky is an exciting new addition to the emerging whiskies of Mexico. Made 100% from 4 types of corn sourced across Oaxaca, Prieto y Prieta contains white, red, purple, and yellow varietals endemic to the state. The corn is broken down with hammer mills and naturally fermented before being distilled twice in copper pots. The whisky is matured in a combination of Virgin French Oak, ex-bourbon, and Mexican Sherry barrels before proofing. Prieto y Prieta is non-chill filtered and made without caramel color adjustment. The vibrancy of corn is immediate on the nose, with hints of earth and palo santo. The flavor of Prieto y Prieta is a Oaxacan sunset in a glass. Full of richly textured milk chocolate, vanilla, sweet corn, and canella spice, this is an unforgettable new entrant into the spirits of Mexico.

Lunático is a further exploration of Oaxacan terroir from the minds of Txomin Aalcorta and Carlos Moreno. Built on a foundation of Oaxacan sugar cane distillate, this gin is a celebration of the agricultural bounty of the region. Botanicals are sourced from across the Oaxacan landscape, with several grown on the distillery property including lavender, chamomile, rosemary, and basil. Both dried and fresh botanicals are used, undergoing a 48-hour maceration before distillation in a copper pot still. Dried botanicals are added directly to the still, while fresh botanicals are suspended in a basket to be vapor infused. Earthy and complex, Lunático opens with comforting aromas of savory herbs before expanding into bright citrus, delicate pine, and warming spice. The finish is long with lingering stewed herbs and sweet pine, making it ideal for a gin and tonic on a warm evening.
