Over the past 150 years, the age-old tradition of merchants, grocers & bonders independently blending and bottling whiskey has until recently all but vanished from Ireland. A dying art made unique, by individual crafts people carefully maturing whiskey in select casks
A new renaissance in Irish Whiskey is on the move. Each hand-crafted expression will be carefully sourced, managed, finished, blended or matured from different locations across Ireland.
In an age of increasing automation in the drinks industry, Two Stacks will rely on traditional techniques that have earmarked high-quality whiskey distilling for more than 100 years – from determining timing through taste and nose while in cask to manually disgorging casks and hand labelling each bottle.
Inspired by Irish distilleries and merchants of old and contemporary global brands of new, Two Stacks Irish Whiskey has the ambition to develop a premium brand recognized for quality rather than quantity, attention to detail and integrity. Two Stacks Single Malt 43% ABV
Two Stacks Single Malt is part of the new core offerings from these upstart bonders. This single malt is aged entirely in two iconic casks – ex bourbon, and oloroso sherry. The whisky itself is a vatting of 60% triple distilled single malt, 10% of which is peated that is married with 40% double distilled single malt. The aromas are warm and complex with leather, orange peel, and golden apple riding high in the glass. The flavor balances savory toasted cashews, smokey black tea, and sweet chocolate cream with a woody complexity that will have you coming back time and time again.

Two Stacks create Irish whiskey that is complex and approachable. Their new Two Stacks Single Grain is the most recent addition to their core line of bonded whiskies and is exemplary of the category. Triple column distilled of maize and malted barley – this whisky offers delicate aromas of grainy sweetness, baked apple skins, and petrichor. Its flavor recalls candied almond, stewed pear, and delicate butterscotch that lingers long after the last drops fall from the glass.

2001 Single Malt – Appleton Rum Finish 56.58%
NOSE: An engaging nose of ripe orchard fruits, honey dipped peach skin, green apple, sweet floral and tropical rum notes beating throughout, with drops of passionfruit and subtle oak.
PALATE: Like gentle waves lapping ashore bring flavours of apples, pear and stone fruits, the hum of lemon peel found amongst a chewy malt backbone of toasted coconut and creamy vanilla pod.
FINISH: Slow to fade, tingling heat leaves the tongue with spiced oak and coconut shavings.
2009 Single Grain – American Rye Finish 63.11%
NOSE: Ripe mango, guava, and honey, an overlap of green coffee bean and silky toffee, toasted oak, and a touch of citrus spice
PALATE: Rich vanilla notes carried by the warm soft texture of the grain, sarsaparilla root followed up by lychee and cream, more honey and dry white chocolate shavings.
FINISH: Long and satisfying. The citrus peel note dissipates, leaving behind cardamon spice and a warm gingerbread glow.
